Method:
Mix dry ingredients together in bowl. Warm
water and mix with wet ingredients. Mix wet and dry ingredients together
thoroughly and place in pan of breadmaker. Bake on Yeast Free
setting.
Note:
the amount of fluids may need to be adjusted
depending on the amount of moisture in the flours and the humidity of the
day. It keeps quite well and has much more taste than GF white bread. We
have found that using margarine instead of oil
results in a slightly softer loaf.
We use a Breville BB270, and the instruction
book is wrong for this setting. The total time displayed is 1.40, and this
includes the 22 minute "keep warm" time, so the bread takes about 1 hour 20
minutes
Miracle Muffins
Yeast free : sugar free : (NOT gluten free)
1 ½ cups
unsweetened applesauce
2 T. canola oil
1 large egg
2 cups unbleached white flour
2 t. baking powder
¾ t. baking soda
2 t. cinnamon
½ t. nutmeg
1 2/3 cups raisins
Heat oven to 375 degrees. Beat together the applesauce, oil and egg. Add
flour, baking powder, baking soda, and spices; beat well. Stir in raisins.
Spoon batter into oiled muffin liners. Bake for 20 to 25 minutes or until
firm to the touch and lightly browned. Cool completely on wire racks.
Yield: 12 muffins.
Miracle Pizza Yeast free :

Pizza dough:
Canola oil
1 Recipe Fat-Free Biscuit
Pizza toppings:
1 Recipe Spaghetti/Pizza Sauce
3-4 slices cooked Meatloaf Recipe
1 small onion, chopped
1 pepper, chopped
Sliced black olives (optional)
Heat oven to 450 degrees. Oil 2 9" cake pans witb canola oil. Make Fat-Free
Biscuit Recipe dividing the dough into 2 halves. Roll and pat each dough
half to ½" thickness. Press each into the 2 cake pans molding a rim around
the edges. Make Spaghetti/Pizza Sauce Recipe spreading ¼ to ½ cup sauce on
each pizza dough. Crumble 1 to 2 slices of Meatloaf Recipe on top of both
sauces. Sprinkle both liberally
with onion, peppers and olives. Bake for 10 to 12 minutes.
Yield: 2 medium pizzas.
Fat-Free Biscuits Yeast
free : sugar free : (NOT gluten free)
2 cups unbleached
flour
1 t. baking soda
2 ½ t. cream of tartar
¾ cup non-fat plain yogurt
1/3 cup water or milk
Heat oven to 450
degrees. Mix together the dry ingredients in bowl. Cut in the yogurt until
like coarse crumbs. Add water or milk all at once. Stir quickly with fork
just until
dough starts to stick together. Lay dough on lightly floured surface. (Dough
will be soft).
Knead gently 10 to 12 strokes. Roll or pat dough ½ inch thick. Dip biscuit
cutter in flour; cut dough straight down. Bake on foiled baking sheet for 10
to 12 minutes.
Makes approximately 10 to 12 biscuits.
Spaghetti/Pizza Sauce
Yeast free : sugar free : gluten free
2 8-ounce cans
tomato sauce
¼ t. garlic powder
½ t. onion powder
2 dashes oregano
¼ t. thyme
¼ t. basil
Dash ground pepper
Dash parsley
1 T. butter
Combine all
ingredients in saucepan. Heat on high until boiling. Set burner on low and
simmer for 15 minutes.
Makes 2 cups.
Marvellous Meatloaf Yeast free :

Loaf: 2 beaten
eggs
1 8-ounce can tomato sauce
½ cup rolled oats
½ cup chopped onion
3 T. chopped green pepper
1 t. salt
Dash thyme; Dash marjoram
Pepper
2 pounds ground round (minced topside of beef)
Topping: Onion slices
½ cup tomato sauce
Onion powder
Heat oven to 350
degrees. Mix together all but the ground round in the loaf recipe. Add the
ground round. Mix well. Shape mixture into a loaf and place in a 9 ¼ x 5 ¼ x
2 ¾-inch pan. Top liberally with onion slices, tomato sauce and onion
powder.
Bake for 1 ¼ hours. Yield: 6-8 servings.
